Our Story

A craft rooted
in tradition

El Garrobero began with a simple conviction: that the foundation of exceptional Mexican cuisine lies in the care given to its most essential element—the tortilla. Our name, meaning "the tortilla maker," reflects this commitment.

Every morning, our masa is stone-ground from nixtamalized corn, pressed by hand, and cooked on a comal. This attention to process extends to every dish we serve—from slow-braised meats in clay pots to salsas ground in molcajetes.
